Lemon, Lime and Mint Soft Drink Recipe

Ingredients (make 1.5 to 2 litres)

For the syrup

80ml lemon juice

20ml lime juice

1 handful fresh mint leaves

150g caster sugar

200ml water


sparkling water

Optional: fresh mint leaves and lemon or lime slices to decorate


1. Put the lemon juice, lime juice, mint leaves, sugar and 200ml water in a small saucepan over medium heat. Bring to a boil. Then, lower the heat, simmer and stir until the sugar has dissolved and the syrup has slightly thickened (about 10 to 15 minutes). 


2. Set aside and let it cool down completely (this process will also let the mint infuse the syrup). Transfer the syrup through a fine mesh sieve and a funnel into a pouring dish or a small bottle. Keep in the fridge for up to a week.


Pour some of the syrup in a glass over ice cubes and top with sparkling water (I go with a syrup/sparkling water ratio of 1:7 - feel free to add more or less depending on your taste). Decorate with a few small mint leaves and a lemon or lime slice.
